A refreshing sorbet recipe where Mack Khen berries goes perfectly with exotic fruits. A suggested recipe by Mai Savanh Lao in collaboration with Bruno Azulay.
The day before, put water and sugar in a saucepan and bring to the boil. Remove from the heat.
Peel the mango and collect the flesh. Cut the passion fruit in half and pass the flesh through a Chinois to remove the seeds.
Mix the juice obtained with the mango.
Combine the syrup, fruit puree and lemon juice. Add the powdered Mack Khen berries and mix.
Let stand overnight in the fridge.
Pass apparatus in an ice cream maker for 30 minutes.
