Fish Papillotte with Spices and Spring Vegetables

 4 Sea bream
 2 Squeezed lime
 1 tsp Salt Flakes
 4 Shallots
 1 Green Pepper
 20 g Fresh ginger
 2 tbsp Whole red pepper from Laos
 2 tsp Espelette or Cayenne pepper (stronger)
 2 tsp Turmeric
 2 tsp Mack Khen berries
 2 tbsp Olive oil
For garnish:
 400 g Spring vegetables (peas, new potatoes, early carrots, baby onions, green asparagus, peppers, olives…)
 1 Lime (cut into slices)
 2 Red onion (cut into slices)


Empty the fish, and keep them whole. Make 2-3 insicions on each side.


Mix the juice of the lemons and the salt flakes until the crystals dissolve. Brush your fish all over and marinate for 15 minutes.


Meanwhile, put shallots, green pepper, fresh ginger, whole red pepper from Laos, Espelette or Cayenne pepper, turmeric Mack Khen berries in a blender, and mix until a paste is obtained.


Prepare an aluminum foil, lined with baking paper on the inside. Cover your fish well with the spice paste, a little olive oil, close your papillottes by tightening them well, then in the oven at 240 ° C for 10 minutes, turn the papilottes then 5 more minutes in the oven.


For the vegetables, cut them into regular brunoise, set aside 5 minutes in a salad bowl with olive oil, salt and pepper. Then the idea is to cook them quickly over very hot fires (5 minutes), without releasing their water.
