 mandolin
Ingredients:
 100 g Green salad cut into strips
 1 Orange
 1 Red onion
 1 Fennel
 2 tsp Virgin olive oil
 1 tbsp Black olive paste
 A few mint leaves
 1 dash Pink salt

Clean, wash and dry the green salad well.

Clean the fennel from the outermost leaves, wash it, dry it well and then cut it thinly with the help of the mandolin.

Assemble the vegetables and fruit in a large dish or bowl.

In a bowl put the black olive paste, the two oils, the pink salt and the chopped mint.

Mix well until you get a homogeneous sauce. When serving, dress the salad by mixing the ingredients well together.
