Soak the gelatine at least 10 min in cold water.
Make a 105°C syrup with the water, lime juice, sugar, vanilla bean and Mack Khen berries.
Arrange your whole strawberries in a silicone mold, head to tail so as to leave as little space as possible.
Soak the gelatin sheets in cold water for 10 min.
Filter the syrup, heat it a little and incorporate the gelatin leaves, mix well and pour it over the strawberries, covering them well.
Keep refrigerated for at least one night.
Serve with a scoop of ice cream, a little whipped cream or custard, but know that the strawberries are sufficient on their own :)
